  • 3 cinnamon roll grands
  • 16 oz shortbread cookies
  • 1/4 cup melted butter
  • 8 oz room temperature cream cheese
  • 1/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup sour cream
  • 1/2 cup strawberry pie filling
  • 2 eggs

Instructions

  1. Crush shortbread cookies into fine crumbs using a food processor or rolling pin.
  2. Mix crushed cookies with melted butter and press into the base of a springform pan to form the crust.
  3. In a bowl, blend cream cheese, sour cream, eggs, flour, sugar, and strawberry pie filling until smooth.
  4. Pipe the cheesecake mixture between unrolled cinnamon rolls on top of the crust.
  5. Bake at 375°F (190°C) for about one hour until set but slightly jiggly in the center.
  6. Cool completely before adding reserved frosting and garnishing with extra strawberry pie filling.
