  • 12 oz cream cheese (room temperature)
  • 1 cup unsalted butter (16 Tbsp, room temperature)
  • 5 cups powdered sugar
  • 1 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with light olive oil or line it with parchment paper.
  3. In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt until well combined.
  4. In another bowl, mix warm coffee, vinegar, vanilla extract, and light olive oil until blended.
  5. Pour the wet mixture into the dry ingredients and mix gently until just combined; avoid overmixing.
  6. Pour the batter into the prepared pan and bake for about 35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
