  • 9 lasagna noodles
  • 4 cups shredded rotisserie chicken
  • 1 Tbsp olive oil
  • 1 medium onion (finely chopped)
  • 4 Tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 2 1/2 cups chicken broth
  • 1 1/2 cups half-and-half
  • 5 oz fresh spinach (coarsely chopped)
  • 15 oz ricotta cheese
  • 3 cups mozzarella cheese (divided)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles in boiling water until al dente; drain and set aside.
  3. In a large saucepan over medium heat, combine olive oil and butter. Sauté chopped onion until translucent, then add minced garlic.
  4. Whisk in flour until golden brown. Gradually add chicken broth and half-and-half, stirring until smooth; simmer until thickened. Season with salt and pepper.
  5. In a mixing bowl, combine shredded chicken, spinach, ricotta cheese, egg, parsley, and half of the mozzarella cheese.
  6. In a baking dish, layer white sauce, noodles, chicken mixture; repeat layers and finish with remaining sauce and mozzarella on top.
  7. Cover with foil and bake for 30 minutes; remove foil and bake an additional 15 minutes until bubbly.
