  • 1520 Biscoff cookies
  • 1/4 cup melted butter
  • 8 oz cream cheese (room temperature)
  • 1/4 cup all-purpose flour
  • 1/4 cup sugar
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/2 cup Biscoff cookie butter
  • 3 refrigerated cinnamon rolls (with frosting)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a food processor, crush the Biscoff cookies into fine crumbs and mix with melted butter.
  3. Line a cake pan with parchment paper and press the cookie mixture firmly into the base.
  4. In a stand mixer, combine cream cheese, flour, sugar, eggs, sour cream, and Biscoff cookie butter until smooth.
  5. Unroll the cinnamon rolls in a spiral shape around the inside of the pan and fill gaps with cheesecake mixture.
  6. Bake for about 1 hour until set but slightly jiggly in the center. Cool completely before removing from the pan.
  7. Top with frosting from cinnamon rolls and crushed Biscoff cookies before serving.
