  • 1/2 white onion (diced)
  • 1 can hatch chilies (4 oz)
  • kosher salt
  • garlic powder
  • chili powder
  • onion powder
  • oregano
  • smoked paprika
  • Flour or corn tortillas
  • Shredded jack cheese
  • Pico de gallo
  • Sour cream or guacamole

Instructions

  1. In a skillet over medium heat, brown the ground chuck until fully cooked, breaking it apart as it cooks.
  2. Drain excess grease and add diced onion and spices. Cook for 2-3 minutes until onions soften.
  3. Stir in refried beans and hatch chilies; cook for another 2-3 minutes.
  4. Toast tortillas in a cast iron skillet on both sides until golden brown.
