  • 1 pound Spaghetti Noodles
  • 2 pounds Ground Beef
  • ½ Yellow Onion (diced)
  • 1 Bell Pepper (diced)
  • 2 tablespoons Olive Oil
  • 1 packet Taco Seasoning
  • 10 ounces Tomatoes with Green Chilis (not drained)
  • 1 cup Sour Cream
  • 1 cup Beef Broth
  • 2 Cups Mexican Blend Cheese

Instructions

  1. Cook spaghetti noodles according to package instructions until al dente; drain and set aside.
  2. In a large skillet over medium-high heat, heat olive oil. Sauté diced onions and bell pepper for about 3-4 minutes until soft.
  3. Add ground beef to the skillet and cook until browned; drain excess grease.
  4. Stir in taco seasoning, tomatoes with green chilis, beef broth, sour cream, and cheese. Simmer until cheese melts.
  5. Fold in cooked spaghetti until well coated and heated through.
