  • 8 oz ground beef
  • 2 slices White American cheese
  • 2 slices Yellow American cheese
  • 4 large sliced white onions
  • 1 small can diced fire-roasted green chilis
  • 1 cup diced onions
  • 2 minced cloves of garlic
  • 1/4 cup beef stock
  • 1/4 cup apple cider vinegar
  • 1/2 cup mayonnaise
  • 2 tbsp honey
  • 1/4 cup chipotle in adobo

Instructions

  1. In a cast iron skillet over medium-high heat, grill the sliced onions until softened and charred.
  2. Divide the ground beef into four equal portions and shape each into a patty that fits inside the onion rings.
  3. Season the patties with salt and pepper, then place them in the grilled onion slices and press down gently.
  4. Cook for about 3 minutes until browned, flip, and cook another 3 minutes before topping each patty with one slice of White American cheese and one slice of Yellow American cheese.
  5. In a separate pan, combine diced onions, fire-roasted green chilis, minced garlic, beef stock, and apple cider vinegar; cook until thickened.
  6. For the sauce, mix mayonnaise, honey, chipotle in adobo, apple cider vinegar, salt, and pepper until smooth.
  7. To serve, layer smoky chipotle sauce on toasted brioche buns followed by stuffed onion bombs and top with chili mix.
