  • 3/4 cup peanut butter
  • 2 medium ripe bananas
  • 1/3 cup honey
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup milk (whole or almond)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups white whole wheat flour (or all-purpose flour)
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F and grease 16 wells of two muffin pans.
  2. Melt the butter in a large bowl and mix in the peanut butter until smooth.
  3. Mash the bananas and add them to the bowl along with honey, eggs, vanilla extract, and milk; whisk until combined.
  4. Stir in baking soda and salt, then gently fold in the flour and chocolate chips until just combined.
  5. Fill each muffin well about three-quarters full with batter.
  6. Bake for 16–17 minutes or until a toothpick comes out clean from the center of a muffin. Cool for five minutes before transferring to a wire rack.
