  • ⅓ cup honey or pure maple syrup
  • 1 cup mashed ripe banana (about 3 medium)
  • ¼ cup milk (your choice: dairy, almond, etc.)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 ½ teaspoons ground cinnamon (plus more for topping if desired)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups white whole wheat flour

Instructions

  1. Preheat your oven to 350°F and prepare your muffin tin with cooking spray or liners.
  2. Melt the unsalted butter in a large mixing bowl.
  3. Combine melted butter with honey/maple syrup, mashed bananas, milk, and vanilla; mix well.
  4. Add eggs and whisk until smooth.
  5. Sprinkle in cinnamon, baking soda, and salt; mix again.
  6. Gently fold in white whole wheat flour until just combined.
  7. Fill muffin tin wells about two-thirds full; sprinkle extra cinnamon on top if desired.
  8. Bake for about 15-17 minutes until a toothpick comes out clean. For mini muffins, bake for 10-12 minutes.
  9. Let cool in the pan for five minutes before transferring to a wire rack.
