1 tablespoon olive oil
2 cups chopped vegetables (like red onion, bell pepper, mushrooms, or broccoli)
1 pound turkey breakfast sausage (removed from casings)
8 eggs
2 pinches salt (to taste)
2 teaspoons unsalted butter
8 burrito-size tortillas
2 cups shredded cheddar cheese (or Monterey Jack, Pepper Jack, or a combination)
Instructions
Preheat your oven to 375°F if baking immediately.
Heat olive oil in a nonstick skillet over medium heat and sauté chopped vegetables for about 4 minutes until softened. Transfer to a bowl.
In the same skillet, cook turkey sausage until browned and fully cooked; add to the bowl with vegetables.
Whisk eggs with salt in a mixing bowl until combined.
Melt butter in the skillet over medium-low heat; pour in eggs and scramble gently until cooked through.
Combine scrambled eggs with the sausage and vegetable mixture.
On each tortilla, place one-eighth of the mixture along with some shredded cheese slightly off-center. Wrap tightly into burritos.
Bake on a parchment-lined baking sheet for about 5-10 minutes if desired.
