Start your day with these hearty Breakfast Burritos, a delicious blend of scrambled eggs, savory turkey sausage, and fresh vegetables all wrapped in warm tortillas.

  • 1 tablespoon olive oil
  • 2 cups chopped vegetables (like red onion, bell pepper, mushrooms, or broccoli)
  • 1 pound turkey breakfast sausage (removed from casings)
  • 8 eggs
  • 2 pinches salt (to taste)
  • 2 teaspoons unsalted butter
  • 8 burrito-size tortillas
  • 2 cups shredded cheddar cheese (or Monterey Jack, Pepper Jack, or a combination)

Instructions

  1. Preheat your oven to 375°F if baking immediately.
  2. Heat olive oil in a nonstick skillet over medium heat and sauté chopped vegetables for about 4 minutes until softened. Transfer to a bowl.
  3. In the same skillet, cook turkey sausage until browned and fully cooked; add to the bowl with vegetables.
  4. Whisk eggs with salt in a mixing bowl until combined.
  5. Melt butter in the skillet over medium-low heat; pour in eggs and scramble gently until cooked through.
  6. Combine scrambled eggs with the sausage and vegetable mixture.
  7. On each tortilla, place one-eighth of the mixture along with some shredded cheese slightly off-center. Wrap tightly into burritos.
  8. Bake on a parchment-lined baking sheet for about 5-10 minutes if desired.
