  • Juice of 1 lemon
  • ½ teaspoon cinnamon
  • 2 large eggs, at room temperature
  • ½ cup + 2 tablespoons sugar
  • ¾ cup full-fat yogurt, at room temperature
  • ¼ cup + 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ⅙ teaspoon salt

Instructions

  1. Preheat your oven to 355°F (180°C) and prepare a spring-form cake pan by lining it with parchment paper and greasing the sides.
  2. In a medium bowl, combine the apple slices with lemon juice and cinnamon. Set aside.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Using an electric mixer, beat the eggs and sugar until pale and fluffy (about 3-4 minutes).
  5. Gradually add in the yogurt, vegetable oil, and vanilla extract until smooth.
  6. Gently fold in the flour mixture until just combined; it's okay if some lumps remain.
  7. Fold one-third of the apple slices into the batter.
  8. Pour the batter into the prepared pan and top with remaining apple slices.
  9. Bake for about 30 minutes or until a toothpick inserted comes out clean.
  10. Cool on a wire rack for about 10 minutes before glazing with apricot or lemon jam if desired.
