  • 1/4 cup milk (dairy or non-dairy)

  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 cups white whole wheat flour
  • 1 large baking apple, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and grease muffin pans.
  2. Melt the butter in a large bowl.
  3. Whisk in honey or maple syrup, applesauce, Greek yogurt, milk, eggs, and vanilla until smooth.
  4. Stir in baking soda, baking powder, salt, and cinnamon until combined.
  5. Fold in the flour until just mixed.

  7. Fill muffin pans two-thirds full and press some apple pieces on top if desired.
  8. Bake regular muffins for 16-18 minutes or mini muffins for about 12 minutes until a toothpick comes out clean.
