  • 1 large egg (beaten)
  • ¼ cup grated Parmesan cheese
  • ½ cup all-purpose flour
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • Oil for frying (about 1½ tablespoons)
  • Chopped chives and sour cream for serving

Instructions

  1. Shred the zucchini using a box grater; mix with salt and let sit in a colander for 10 minutes to draw out moisture.
  2. Squeeze shredded zucchini in cheesecloth to remove excess liquid.
  3. In a mixing bowl, combine drained zucchini, beaten egg, Parmesan cheese, flour, pepper, garlic powder, and any additional seasonings.
  4. Heat oil in a skillet over medium heat.
  5. Drop spoonfuls of the mixture into the skillet; flatten gently with an oiled spatula.
  6. Cook for about 3 minutes on each side until golden brown and crispy.
  7. Drain on paper towels before serving warm with sour cream and chives.
