  • ½ small onion (diced)
  • 2 bell peppers (diced)
  • 3 cups shredded chicken
  • 4 cups shredded cheese (Oaxaca, Monterey Jack, or Mexican blend)
  • 6 large flour tortillas
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté diced onion and bell peppers with a pinch of salt until softened (about 8–10 minutes).
  2. Add shredded chicken and seasonings along with ¼ cup water; cook until thickened (3–4 minutes). Transfer mixture to a bowl.
  3. In the same skillet, add remaining olive oil and place one tortilla down. Layer cheese on half of the tortilla followed by the chicken mixture and more cheese. Fold over.
  4. Cook until golden on both sides; repeat with remaining ingredients.
  5. Slice quesadillas into wedges and serve hot with your favorite dipping sauces.
