  • ⅓ cup cocoa powder
  • 4 tsp. instant espresso powder
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ¼ cup granulated sugar
  • 1 tbsp. brown sugar
  • ¼ cup Greek yogurt
  • ¼ cup plus 2 tbsp. milk
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 tbsp. unsalted butter (melted and cooled slightly)
  • 1 ½ cups powdered sugar
  • 2 tbsp. milk
  • ¼ tsp. peppermint extract
  • 2 tbsp. crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
  2. In a mixing bowl, whisk together the dry ingredients: flour, cocoa powder, espresso powder, baking powder, baking soda, salt, granulated sugar, and brown sugar.
  3. In another bowl, mix the wet ingredients: Greek yogurt, milk, egg, vanilla extract, and melted butter until smooth.
  4. Combine the wet and dry ingredients gently until just mixed; do not overmix.
  5. Fill each donut cavity about two-thirds full with batter.
  6. Bake for about 10 minutes or until a toothpick comes out clean. Cool slightly before transferring to a wire rack.
  7. For the glaze, whisk powdered sugar with milk and peppermint extract until smooth. Dip cooled donuts into the glaze and sprinkle with crushed peppermint candies.
