  • ¼ cup sour cream
  • 1 ½ cups shredded cooked chicken
  • 1 cup shredded sharp cheddar cheese

  • 2 tablespoons red bell pepper (finely chopped)
  • 2 tablespoons chopped fresh cilantro
  • 1 ½ tablespoons taco seasoning
  • 4 burrito-sized tortillas

Instructions

  1. In a large bowl, beat the softened cream cheese and sour cream together until smooth.
  2. Add shredded chicken, cheddar cheese, green onions, bell peppers, cilantro, and taco seasoning; mix well.
  3. Lay a tortilla flat on a clean surface and spread about ¼ of the filling evenly across it, leaving a half-inch border.
  4. Roll the tortilla tightly to form a log; repeat this with the remaining tortillas and filling.
  5. Wrap each log tightly in plastic wrap and refrigerate for at least four hours or overnight.
  6. Unwrap the pinwheels and slice into half-inch thick rounds before serving.
