  • 1 pound ground turkey (94%)
  • 2 ½ cups Oaxaca or Monterey Jack cheese
  • 10 medium flour tortillas
  • 1 bell pepper (diced)
  • ½ yellow onion (diced)
  • ½ cup canned black beans
  • ½ cup canned corn
  • 2 tablespoons olive oil (divided)
  • 1 batch turkey seasoning or 1 pack of taco seasoning
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon table salt
  • ½ teaspoon onion powder
  • ½ teaspoon pepper

Instructions

  1. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the ground turkey, bell pepper, and onion; cook until the turkey is browned.
  2. Stir in black beans, corn, seasoning mix, and tomato paste with water. Cook until heated through and any excess moisture evaporates.
  3. On a clean surface, brush one side of each tortilla with oil. Flip it over, layer with cheese and the turkey mixture on one half, then fold.
  4. In a separate skillet over medium-high heat, cook each folded quesadilla until golden brown and crispy on both sides.
  5. Allow to cool slightly before slicing into wedges.
