  • 2/3 cup long-grain white rice (uncooked)
  • 1 pound ground beef (80-90%)
  • 1 yellow onion (diced)
  • 3 jalapeños (diced and de-seeded)
  • 34 cups red enchilada sauce
  • 1 16-ounce can refried beans
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 6 large tortillas

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the rice under cold water until the water runs clear. Combine with 1 1/3 cups of water in a small pot and bring to a boil. Cover and simmer on low for about 15 minutes until fully cooked.
  3. In a large skillet over medium heat, cook ground beef with diced onion and jalapeños until browned. Drain excess fat and season with salt and pepper.
  4. Mix in ½ cup of enchilada sauce with the beef mixture. Spread ¼ cup of enchilada sauce on the bottom of a baking dish.
  5. On each tortilla, layer refried beans, shredded cheese, rice, and beef mixture. Roll tightly and place seam side down in the baking dish.
  6. Pour remaining enchilada sauce over burritos and sprinkle with cheese. Bake for about 15 minutes until cheese is melted.
