  • 1 pound 90% lean ground beef
  • 1 batch homemade taco seasoning
  • 1 tablespoon tomato paste
  • ½ cup water
  • 4 burrito-sized flour tortillas
  • 2 cups shredded Mexican cheese
  • 1 tablespoon butter
  • Guacamole and sour cream (for serving)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon.
  2. While cooking, mix together the spices for the taco seasoning in a small bowl.
  3. Reduce heat to medium and stir in taco seasoning, tomato paste, and water. Cook for 2–3 minutes until liquid reduces and coats the beef well.
  4. Lay a tortilla flat, sprinkle ¼ cup of cheese on one half, then add some of the beef mixture on top followed by another ¼ cup of cheese. Fold the tortilla in half.
  5. Melt butter in the skillet over medium heat and cook each quesadilla for 2–4 minutes per side until golden brown and crispy.
  6. Slice into wedges and serve warm with guacamole and sour cream.
