  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • ½ cup unsalted butter (at room temperature)
  • ⅓ cup packed light brown sugar
  • ½ cup molasses (not blackstrap)
  • 1 egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  2. In a stand mixer bowl with the paddle attachment, beat butter and brown sugar until light and creamy. Add molasses, egg yolk, and vanilla; mix until combined.
  3. Gradually mix in the dry ingredients until just combined.
  4. Shape dough into a disk, wrap in plastic wrap, and chill for at least 2 hours.
  5. Preheat oven to 350°F. Roll out dough to ¼-inch thickness on a floured surface and cut into desired shapes.
  6. Place cookies on a parchment-lined baking sheet and bake: medium cookies for 7–9 minutes or mini cookies for 5–7 minutes.
  7. Allow cooling before decorating with icing.
