  • 15 oz can black beans (rinsed and drained)
  • 3 eggs
  • ½ cup unsweetened cocoa powder
  • ½ cup old-fashioned rolled oats
  • ½ cup plain Greek yogurt
  • ½ cup pure maple syrup or honey
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • ½ cup bittersweet chocolate chips

Instructions

  1. Preheat your oven to 350°F. Line a muffin tin with silicone or paper liners.
  2. In a blender, combine all ingredients except the chocolate chips. Blend until smooth.
  3. Pour the mixture into the muffin tin, filling each cup nearly to the top. Add a few chocolate chips on top of each muffin.
  4. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cool in the pan for about 5 minutes before transferring to a wire rack.
