  • 1 cup fresh mango (finely diced)
  • 1/4 cup red bell pepper (finely chopped)
  • 2 tablespoons red onion (finely chopped)
  • 2 tablespoons fresh cilantro (chopped)
  • 1/2 jalapeño (seeded and finely diced)
  • Juice from 1 lime
  • 1 1/4 pounds salmon fillet
  • 1 tablespoon olive oil
  • Chili powder
  • Cumin
  • Salt
  • Honey

Instructions

  1. Prepare the mango salsa by mixing together diced mango, red bell pepper, red onion, cilantro, jalapeño, lime juice, and salt in a medium bowl. Set aside.
  2. Preheat your oven to 375°F (190°C).
  3. On a baking sheet, place the salmon fillet. In a small bowl, combine olive oil, chili powder, cumin, and salt; coat the salmon evenly.
  4. Bake the salmon for about 12-17 minutes or until it flakes easily with a fork.
  5. While the salmon bakes, prepare the chili lime sauce by simmering lime juice, honey, red pepper flakes, cumin powder, chili powder, and salt in a small saucepan until reduced by half. Remove from heat and whisk in cold butter until smooth.
  6. Once cooked, brush the chili lime sauce over the salmon before serving.
  7. Serve over rice topped with fresh mango salsa.
