  • 6 large bell peppers
  • 1 lb lean ground beef (or turkey/chicken)
  • 1½ cups cooked rice
  • 1 cup black beans (drained and rinsed)
  • 1 cup frozen corn
  • 2½ cups shredded cheese (sharp cheddar & Monterey Jack)

Instructions

  1. Preheat your oven to 375°F. Lightly grease a baking dish.
  2. Cut the tops off each bell pepper, remove seeds, and sprinkle salt and spices inside.
  3. In a skillet over medium-high heat, brown the ground beef with diced onion for about 4–5 minutes.
  4. Stir in chili powder, smoked paprika, cumin, garlic powder, salt, and black pepper.
  5. Mix in cooked rice, corn, black beans, and cheeses until combined.
  6. Stuff the mixture into each pepper and top with remaining cheese.
  7. Bake uncovered for 30–35 minutes until peppers are tender.
