  • 2 cans refrigerated cinnamon rolls
  • ¼ cup granulated sugar
  • 1 ½ teaspoons pumpkin pie spice (divided)
  • ½ cup packed brown sugar
  • ½ cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C). Generously spray a 12-cup bundt pan with nonstick cooking spray.
  2. Open the cinnamon rolls and set aside the icing. Cut each roll into four pieces.
  3. In a gallon-size resealable bag, combine granulated sugar and 1 teaspoon of pumpkin pie spice. Add the cinnamon roll pieces, seal the bag, and shake until well coated.
  4. In a mixing bowl, combine brown sugar and melted butter, stirring until mixed.
  5. Layer the coated cinnamon roll pieces in the prepared bundt pan and drizzle with the butter mixture.
  6. Bake for 40-50 minutes until golden brown. Let cool for five minutes before inverting onto a serving plate.
  7. Stir remaining pumpkin pie spice into reserved icing and drizzle over warm monkey bread before serving.
