  • 1½ cups all-purpose flour
  • ¼ cup granulated sugar (for topping)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 5 tablespoons unsalted butter (cold and cubed)
  • ⅓ cup plus 1 tablespoon milk
  • Coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat your oven to 350°F.
  2. Peel and slice the peaches into ½-inch thick slices. In a large bowl, combine sliced peaches with sugar, lemon juice, cornstarch, vanilla, and cinnamon. Stir well.
  3. Pour the peach mixture into an 8×8-inch baking dish and bake for about 10 minutes.
