  • 34 medium russet potatoes (peeled)
  • 34 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt + extra for topping
  • Vegetable oil for frying
  • 1 tablespoon fresh parsley (optional)

Instructions

  1. Boil peeled potatoes in a large pot of water for about 6-7 minutes until parboiled but still firm.
  2. Allow the boiled potatoes to cool, then shred them using a box shredder.
  3. Salt the shredded potatoes and let them sit in a colander lined with cheese cloth for 10 minutes to remove excess moisture.
  4. Transfer the drained potatoes to a mixing bowl and add flour and seasonings, mixing well.
  5. Form the mixture into tube-shaped pieces about 4–6 inches long, then cut into 1½ inch pieces resembling tater tots.
  6. Heat vegetable oil in a pot to 370-375°F. Fry tater tots in batches for about 5 minutes until golden brown.
  7. Drain on paper towels and sprinkle with salt before serving.
