  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ⅓ cup granulated sugar (for topping)
  • 2 teaspoons baking powder
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 5 tablespoons unsalted butter (frozen)
  • ½ cup plus 1 tablespoon buttermilk
  • Coarse sugar for sprinkling

Instructions

  1. Freeze the butter for at least 30 minutes.
  2. Preheat oven to 350°F and grease an 8×8 or 9×9-inch baking dish.
  3. In a bowl, mix cherries, sugar, cornstarch, and vanilla until combined; set aside.
  4. In another bowl, whisk together flour, sugar for topping, baking powder, cinnamon, and salt.
  5. Grate frozen butter into dry ingredients and mix gently.
  6. Combine buttermilk and vanilla extract; add to dry mixture and mix until just combined.
  7. Pour cherry mixture into the baking dish and place portions of the dough on top; sprinkle with coarse sugar.
  8. Bake for about 40–50 minutes until bubbly and golden brown.
  9. Cool for at least 15 minutes before serving.
