  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • ½ teaspoon salt + more for topping
  • 1 cup whole milk (chilled in freezer for 10 minutes)
  • Fresh parsley for garnish
  • Vegetable oil for frying (about 1½ quarts)

Instructions

  1. Prepare the batter by whisking together flour, garlic powder, and salt in a mixing bowl. Gradually add chilled milk, whisking until smooth.
  2. Heat vegetable oil in a large heavy-bottom pan to around 370°F (188°C), maintaining a temperature between 360°F (182°C) and 380°F (193°C).
  3. Dip each mushroom into the batter using a fork and let excess batter drip off.
  4. Fry mushrooms in batches, carefully placing them into the hot oil without overcrowding the pan.
  5. Cook until golden brown, about 4 minutes, adjusting time for larger mushrooms if necessary. Remove from oil and drain on paper towels.
  6. Sprinkle with salt and garnish with fresh parsley before serving warm.
