  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 1/2 cup 2% milk
  • 1/4 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 ounces cream cheese (at room temperature)
  • 1 large egg (for filling)
  • 2 tablespoons granulated sugar (for filling)
  • 2 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350ºF. Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, mix together pumpkin puree, granulated sugar, brown sugar, eggs, milk, and vegetable oil until combined.
  3. Add flour, pumpkin pie spice, baking soda, baking powder, and salt to the pumpkin mixture; stir until just combined.
  4. In another bowl, beat cream cheese until smooth; add egg, granulated sugar, and flour and mix well.
  5. Pour half of the pumpkin batter into the prepared pan. Drop spoonfuls of cream cheese mixture on top and spread it evenly with an offset spatula. Layer the remaining pumpkin batter over it.
  6. Bake for about 60–80 minutes or until a tester inserted in the center comes out clean. If browning too quickly on top, cover loosely with foil.
  7. Cool in the pan for about 5–10 minutes before transferring to a wire rack to cool completely.
