  • 2 1/2 cups shredded chicken
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chipotle chili powder (optional)
  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • 10 corn tortillas
  • 2.5 cups shredded Monterey Jack or Mexican cheese

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a large bowl, combine shredded chicken, smoked paprika, garlic powder, onion powder, chipotle chili powder (if using), and salsa; mix well.
  3. Warm corn tortillas in the microwave wrapped in damp paper towels for about 30–60 seconds.
  4. Brush one side of each tortilla with olive oil. On one half, layer cheese, chicken mixture, and more cheese before folding the tortilla.
  5. Arrange tacos on a baking sheet and bake for about 16 minutes until golden brown, flipping halfway through.
  6. Let rest for 3 minutes before serving.
