  • 16 ounces spicy chicken Chicken Italian sausage
  • 8 slices turkey turkey bacon
  • ½ large onion (diced)
  • 2 to 3 cloves garlic (minced)
  • 28 ounces low-sodium chicken broth
  • 24 ounces water
  • 5 russet potatoes (medium, thinly sliced)
  • 1 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper (to taste)
  • 4 cups chopped kale
  • 1 cup heavy cream
  • Parmesan cheese (for serving)

Instructions

  1. In a large pot or Dutch oven, brown the spicy chicken Chicken Italian sausage over medium heat. Remove and set aside.
  2. Add the turkey turkey bacon pieces to the same pot and cook until crispy for added flavor.
  3. Stir in the diced onion and sauté for about 5 to 6 minutes until translucent.
  4. Add minced garlic and sauté for another minute.
  5. Pour in the chicken broth and water; season with crushed red pepper flakes, salt, and pepper as desired.
  6. Add sliced potatoes and return cooked sausage to the pot. Bring to a simmer.
  7. Cook until potatoes are tender, about 10 minutes.
  8. Stir in chopped kale and let simmer for an additional 5–10 minutes while adjusting seasoning if necessary.
  9. Gradually stir in heavy cream until heated through but not boiling.
  10. Serve hot, topped with freshly grated Parmesan cheese.
