  • Yellow onion
  • Butternut squash
  • Carrots
  • Vegetable broth
  • Unsweetened apple juice
  • Garlic powder
  • Pumpkin puree

Instructions

  1. Heat olive oil in a large stock pot over medium-high heat. Add diced onion and sauté until translucent (2–3 minutes).
  2. Stir in butternut squash, sliced carrots, vegetable broth, and apple juice. Bring to a boil, then reduce heat and simmer uncovered for 15 minutes until vegetables are tender.
  3. Add garlic powder, salt, cinnamon, curry powder, onion powder, nutmeg, pumpkin puree, butter, cream cheese, heavy cream, and maple syrup. Mix well until creamy.
  4. Carefully blend the mixture in batches using a high-speed blender until smooth.
