  • 1 1/2 lbs boneless skinless chicken breasts or thighs (cut into 1-inch pieces)
  • 1/4 cup olive oil
  • 3 tablespoons red grape juice vinegar
  • 3 garlic cloves (minced)
  • Juice of one lemon
  • 1 teaspoon dried oregano
  • 1 medium red onion (chopped)
  • 1 medium zucchini (quartered)
  • 1 1/4 cups jasmine rice
  • 1 1/2 cups chicken broth

Instructions

  1. In a mixing bowl, combine chicken pieces with olive oil, red grape juice vinegar, minced garlic, lemon juice, oregano, salt, and pepper. Marinate for at least 15 minutes.
  2. Set the Instant Pot to sauté mode. Add olive oil and sear marinated chicken until golden brown on both sides.
  3. Add chopped onion and zucchini; sauté for another few minutes before pouring in chicken broth and additional lemon juice.
  4. Gently place jasmine rice on top without stirring. Seal the lid and cook on high pressure for 7 minutes.
  5. Once done, carefully release pressure using a wooden spoon. Garnish with fresh parsley and serve.
