  • 2 tablespoons salted butter
  • 1 tablespoon extra virgin olive oil
  • 2 large white onions, thinly sliced
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons spicy brown mustard
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 1 teaspoon granulated sugar (optional)
  • ½ teaspoon fresh ground black pepper
  • ½ teaspoon fine sea salt
  • 6 slices of bread (French, sourdough, brioche, etc.)
  • 3 tablespoons mayonnaise (optional)
  • 6 slices Provolone cheese
  • 6 slices Gruyère cheese

Instructions

  1. Heat the salted butter and olive oil in a large skillet over medium heat.
  2. Add the sliced onions along with Worcestershire sauce, mustard, Italian seasoning, garlic powder, optional sugar, black pepper, and salt. Stir well.
  3. Cook the onions while stirring occasionally for about 20–25 minutes until they are golden brown and caramelized. Set aside.
  4. In a clean skillet over medium heat, spread mayonnaise on one side of each slice of bread if desired.
  5. Place bread in the skillet with the mayonnaise side down. Top each slice with Provolone cheese, followed by caramelized onions and Gruyère cheese. Add another slice of bread on top (mayo side facing out).
  6. Cook until both sides are golden brown and crispy—about 2–3 minutes per side—ensuring the cheese melts completely.
  7. Slice in half and serve immediately with your favorite sides.
