  • 1 lb boneless, skinless chicken breast (cut into 1-inch cubes)
  • 2 cups broccoli florets
  • 1/2 yellow bell pepper (cut into 1-inch pieces)
  • 1/2 red bell pepper (cut into 1-inch pieces)
  • 1/2 cup baby carrots (sliced)
  • 1/4 cup low sodium chicken broth
  • 3 tbsp low sodium soy sauce
  • 1/4 cup honey
  • 1 tbsp toasted sesame oil
  • 2 tsp minced ginger
  • 2 garlic cloves (minced)
  • 1 tbsp corn starch
  • 2 tbsp cold water
  • 1/2 tsp crushed red pepper flakes
  • salt and pepper (to taste)
  • 2 tbsp olive oil (divided)

Instructions

  1. Season chicken cubes with salt and pepper. Heat 1 tbsp olive oil in a wok or large skillet over medium-high heat. Add chicken and cook for about 5-7 minutes until cooked through. Remove from pan.
  2. Add another tablespoon of olive oil to the same pan, then add broccoli, bell peppers, and carrots. Sauté for about 3-4 minutes until veggies are tender yet crisp.
  3. In a bowl, mix ginger, garlic, cornstarch with water, chicken broth, soy sauce, honey, sesame oil, and crushed red pepper flakes.
  4. Return chicken to the pan with veggies and pour in the sauce mixture. Stir well to coat everything evenly and cook for an additional 2-3 minutes until heated through.
