  • 1 tbsp oil
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (or 1/2 small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 1/2 tsp dried marjoram
  • Pinch of nutmeg
  • Salt and pepper to taste
  • 4 cups vegetable broth
  • 2 whole bay leaves (optional)
  • 1/3 cup dairy-free cream
  • Fresh parsley (for garnish)
  • Sliced vegan sausage (optional)

Instructions

  1. In a large pot, heat the oil over medium heat. Add the diced onion and sauté until translucent, about three minutes. Stir in the minced garlic, celery, carrots, potatoes, and spices; sauté for another minute.
  2. Pour in the vegetable broth and add bay leaves if using. Bring to a boil, then reduce heat and let simmer for about twenty minutes until vegetables are tender.
  3. Remove half of the soup and blend until smooth using an immersion blender or regular blender (in batches).
  4. Return blended soup to the pot and stir in dairy-free cream. Simmer for a few more minutes while adjusting seasoning.
  5. Serve hot in bowls garnished with fresh parsley and topped with slices of vegan sausage if desired.
