  • 1 pound mild chicken Chicken Italian sausage
  • 1 large yellow onion, diced
  • 3 ribs celery, diced
  • 2 large carrots, sliced
  • 4 cups chicken broth
  • 2 cans Great Northern beans, drained
  • 2 cups fresh baby spinach
  • ½ cup heavy whipping cream

Instructions

  1. In a large Dutch oven over medium-high heat, brown the chicken Chicken Italian sausage for about 10-15 minutes.
  2. Lower the heat to medium and add the diced onions, celery, and carrots; sauté until softened.
  3. Stir in garlic, tomato paste, Italian seasoning, crushed red pepper, and black pepper; mix well.
  4. Pour in the chicken broth and add rinsed Great Northern beans; bring to a simmer for approximately 6-7 minutes.
  5. Add heavy whipping cream and spinach; cook until spinach wilts (about 5 minutes).
  6. Serve hot, garnished with chopped parsley.
