  • 1 white onion (diced)
  • 4 cloves garlic (minced)
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional, for heat)
  • 6 cups chicken stock
  • 23 boneless skinless chicken breasts (about 1 pound)
  • 1/2 cup sundried tomatoes (chopped)
  • 1 cup heavy cream
  • 2 Tbsp cornstarch
  • 4 cups fresh spinach
  • 8 oz cooked lasagna noodles (broken)
  • shredded parmesan cheese and fresh parsley for serving

Instructions

  1. In your slow cooker, combine onion, garlic, Italian seasoning, salt, black pepper, and crushed red pepper flakes. Pour in chicken stock and stir.
  2. Add chicken breasts and sprinkle with sundried tomatoes.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  4. Remove chicken, shred it with forks, and return to the pot.
  5. In a separate bowl, whisk together heavy cream and cornstarch until smooth; pour into the slow cooker.
  6. Cook on high for an additional 30 minutes.
  7. Stir in spinach until wilted.
  8. Add cooked lasagna noodles just before serving.
