  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 3 tablespoons flour
  • 1 teaspoon dried basil
  • ½ teaspoon oregano
  • 1 teaspoon hot sauce
  • 1 cup heavy cream
  • 5 cups chicken broth
  • 2 cups kale (chopped)
  • 2 cups tortellini (refrigerated or frozen)

Instructions

  1. In a large pot over medium-high heat, cook the ground chicken sausage and diced onions for about 8-10 minutes until the onions soften and the sausage is fully cooked. Drain excess grease and add minced garlic for an additional minute.
  2. Stir in the flour and cook for another 1-2 minutes. Add dried basil, oregano, hot sauce, and other seasonings; mix well.
  3. Pour in the chicken broth while scraping the bottom of the pot with a silicone spatula. Slowly stir in the heavy cream and bring to a boil before reducing heat to simmer.
  4. Add chopped kale and tortellini to the pot and let simmer for an additional 3-5 minutes.
  5. Taste your soup and adjust salt as needed before serving.
