  • 1 cup cornmeal
  • 1 Tbsp baking powder
  • 1 tsp salt
  • ½ tsp ground cinnamon (or ginger)
  • ¼ tsp freshly ground nutmeg
  • ½ cup packed brown sugar
  • 2 large eggs
  • 1 cup pumpkin purée
  • ⅓ cup vegetable oil
  • 2 Tbsp molasses
  • ⅓ cup buttermilk (or milk)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the flour, cornmeal, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, combine the brown sugar, eggs, pumpkin purée, vegetable oil, molasses, and buttermilk until well mixed.
  4. Gently fold the dry ingredients into the wet mixture until just combined—do not overmix!
  5. Pour the batter into a greased 9-inch springform pan and spread evenly.
  6. Bake for 30–35 minutes or until a toothpick comes out clean from the center.
  7. Allow cooling for a few minutes in the pan before transferring to a wire rack or slicing.
