  • 1 1/2 lb. boneless chuck roast, cut into small cubes
  • 3 tbsp. olive oil
  • 4 medium carrots, peeled and diced
  • 1 large onion, peeled and diced
  • 3 medium garlic cloves, minced
  • 1 cup pearl barley (or hulled barley)
  • 2 tbsp tomato paste
  • 8 cups beef or chicken broth
  • 1 tsp dried thyme
  • Sea salt and black pepper to taste

Instructions

  1. Heat a large Dutch oven on high heat and add olive oil along with the cubed beef. Cook for about 10 minutes until browned.
  2. Reduce heat to medium; add diced onion, carrots, and minced garlic. Cook for about 5 minutes until softened.
  3. Stir in tomato paste, dried thyme, sea salt, and black pepper while scraping brown bits from the pot for enhanced flavor.
  4. Add pearl barley and broth; reduce heat to medium-low, cover partially, and simmer until beef is tender (about 1½ hours). Adjust consistency with extra broth if desired.
