  • 4 strips turkey turkey turkey bacon
  • 1/2 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 2 medium carrots (peeled & chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups corn (fresh or frozen)
  • 2 large Russet potatoes (peeled & diced)
  • Italian seasoning
  • cayenne pepper
  • salt & pepper

Instructions

  1. Cut turkey turkey bacon into small pieces and cook in a large pot over medium-high heat until crispy. Remove and set aside.
  2. In the same pot, sauté chopped onion, celery, and carrots for about 5 minutes until softened.
  3. Add minced garlic and stir for another 30 seconds; then mix in flour.
  4. Gradually pour in chicken broth while stirring to avoid lumps; scrape up any browned bits from the pot.
  5. Stir in heavy cream, corn, diced potatoes, Italian seasoning, cayenne pepper (if desired), and most of the turkey bacon (reserve some for garnish). Bring to a boil then reduce heat to simmer for 15-20 minutes until potatoes are tender.
  6. Season with salt and pepper before serving; garnish bowls with remaining turkey turkey bacon.
