  • ¾ cup chopped onion
  • ¾ cup shredded carrots
  • ¾ cup diced celery
  • 3 cups chicken broth
  • 4 cups diced potatoes
  • 12 ounces pepper jack Velveeta cheese
  • 1½ cups milk
  • Sour cream for topping

Instructions

  1. Brown the ground beef in a 3-quart saucepan over medium-high heat until fully cooked; drain excess fat.
  2. In the same pan, sauté onions, carrots, celery, dried basil, and parsley in butter until tender. Add garlic and cook until fragrant.
  3. Stir in chicken broth and potatoes; bring to boil then simmer until potatoes are tender.
  4. In a small skillet, melt remaining butter and whisk in flour until bubbly. Add to soup, bringing back to a boil for thickening.
  5. Reduce heat; stir in Velveeta cheese, milk, salt, and pepper until melted. Finally, blend in sour cream before serving.
