  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 1 celery stick, chopped
  • 1 lb carrots, peeled and diced
  • 1 lb potatoes, peeled and diced
  • 2 ½ cups low-sodium vegetable broth
  • Spices: Italian herbs, thyme, parsley, black pepper, fine salt

Instructions

  1. Sauté the onion in butter or olive oil over medium heat with a pinch of salt and pepper until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
