  • 12 lasagna noodles
  • 10 oz frozen chopped spinach
  • 1 egg
  • 15 oz ricotta cheese
  • 8 oz shredded mozzarella cheese (divided)
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 25 oz marinara sauce

Instructions

  1. Cook the lasagna noodles according to package directions for al dente in a large pot of salted water. Drain and set aside on parchment paper.
  2. Thaw the spinach in a microwave-safe bowl; drain excess moisture by wrapping it in a towel and squeezing.
  3. Preheat your oven to 350°F. In a mixing bowl, beat an egg and mix in thawed spinach, ricotta, 7 oz mozzarella, Parmesan, salt, and pepper until well combined.
  4. Spread 1 cup of marinara sauce in a baking dish. Place about ¼ cup of the cheese-spinach mixture onto each noodle, roll tightly, and place seam side down in the dish.
  5. Top with remaining marinara sauce and sprinkle with remaining mozzarella. Cover with foil and bake for 30 minutes; uncover and bake for another 5-10 minutes until cheese is bubbly.
