  • 1 cup canned pumpkin puree
  • ½ cup honey or pure maple syrup
  • ¼ cup milk (dairy or non-dairy)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 1 ½ cups white whole wheat flour
  • ½ cup chocolate chips

Instructions

  1. Preheat your oven to 350°F and spray a muffin tin with cooking spray.
  2. Melt unsalted butter in a mixing bowl using the microwave.
  3. Combine melted butter with pumpkin puree, honey or maple syrup, and milk; whisk until smooth. Add in eggs and vanilla extract.
  4. Mix dry ingredients—baking soda, baking powder, salt, and pumpkin pie spice—into the wet mixture until blended.
  5. Gently fold in white whole wheat flour and chocolate chips using a rubber spatula.
  6. Scoop batter into prepared muffin pan and top with extra chocolate chips if desired.
