  • 45 medium-large bell peppers (any color)
  • ½ pound lean ground beef or ground turkey
  • 1 cup cooked brown or white rice
  • ½ cup finely chopped yellow onion
  • 15-ounce can diced tomatoes (drained)
  • 8-ounce can tomato sauce (divided)
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheese (cheddar or mozzarella, divided)

Instructions

  1. Prepare the bell peppers by slicing off the tops and removing seeds/membranes.
  2. Optional: Use the Sauté function on your Instant Pot to brown the ground beef and onions until tender.
  3. In a mixing bowl, combine the cooked or uncooked beef with rice, onion, tomatoes, ¼ cup tomato sauce, seasonings, and half of the cheese; mix well.
  4. Add water to the Instant Pot and place the metal trivet inside.
  5. Fill each pepper with the mixture and place them upright on the trivet; top with remaining tomato sauce.
  6. Secure the lid and set cooking time (16 minutes for uncooked beef; 8 minutes for cooked).
  7. Once done, quick-release pressure and ensure internal temperature reaches at least 165°F before serving.
  8. Top with remaining cheese and cover briefly until melted.
