  • Zest of 1 orange
  • 1/2 cup orange juice (from 1 large orange)
  • 1/4 cup brown sugar (or honey or pure maple syrup)
  • 1/4 cup low sodium soy sauce
  • 3 tablespoons apple cider vinegar
  • 2 cloves garlic (minced)
  • 1 tablespoon minced fresh ginger
  • 1 pinch red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1.5 pounds boneless, skinless chicken breasts (or thighs or tenders)
  • 1 cup long grain white rice (rinsed and drained)
  • 1 cup water
  • 1 tablespoon cornstarch
  • 3 green onions (sliced)
  • Sesame seeds

Instructions

  1. In a medium bowl, whisk together the orange zest, orange juice, brown sugar, soy sauce, apple cider vinegar, garlic, ginger, and red pepper flakes if using.
  2. Cut the chicken into bite-sized pieces for even cooking.
  3. Set your Instant Pot to sauté mode and heat olive oil. Add chicken pieces and brown for about 4–5 minutes. Cancel sauté mode once done.
  4. Pour the prepared sauce over the chicken and stir well.
  5. For pot-in-pot cooking: Place a trivet over the chicken mixture and add rinsed rice mixed with water in a separate bowl on top of the trivet.
  6. Close the lid and set to pressure cook for 4 minutes at high pressure.
  7. Allow natural pressure release for about 10 minutes before quick releasing any remaining pressure.
  8. Carefully remove the rice bowl and thicken the sauce with a cornstarch slurry by stirring it into the pot while on sauté mode until thickened.
  9. Serve over fluffy rice garnished with sliced green onions and sesame seeds.
