  • 2 pounds lean ground beef
  • ½ cup Panko breadcrumbs
  • ¾ cup finely chopped yellow onion
  • 3 cloves garlic (minced)
  • 2 large eggs
  • 3 tablespoons ketchup
  • 2 ½ pounds yukon gold potatoes
  • ½ cup milk (warmed)
  • Unsalted butter

Instructions

  1. In a mixing bowl, combine the ground beef, Panko breadcrumbs, chopped onion, minced garlic, eggs, ketchup, thyme, garlic powder, salt, and pepper. Mix until well combined.
  2. Shape the meat mixture into an 8-inch loaf on parchment paper.
  3. Place quartered yukon gold potatoes in a separate bowl and cover with water; season with salt.
  4. Pour one cup of water into the Instant Pot and place a trivet inside. Carefully place the meatloaf on top of the trivet and arrange potatoes around it.
  5. Secure the lid and pressure cook on high for 30 minutes.
  6. While cooking, mix ketchup, brown sugar, and vinegar for the glaze.
  7. After cooking, do a quick release of pressure. Brush the meatloaf with glaze before serving.
