  • 1 cup finely chopped yellow onion
  • 1 cup finely chopped carrot (23 carrots)
  • 1 green bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 1 ½ cups dry green lentils (rinsed and drained)
  • 15 ounce can tomato sauce
  • ¼ cup ketchup
  • 2 tablespoons pure maple syrup (or brown sugar)
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons yellow mustard
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 ½ cups vegetable broth (or chicken broth or water)
  • Toasted burger buns
  • Red onion or other toppings as desired

Instructions

  1. Sauté the vegetables: In the Instant Pot, heat olive oil using the Sauté function. Add chopped onion, carrots, and bell pepper; cook until softened (about 4 minutes). Stir in minced garlic and cook for an additional 30 seconds. Cancel the Sauté function.
  2. Combine ingredients: Add lentils, tomato sauce, ketchup, maple syrup, apple cider vinegar, mustard, chili powder, salt, pepper, and vegetable broth to the pot. Stir well to combine.
  3. Pressure cook: Secure the lid and set the steam valve to sealing. Cook on high pressure for 5 minutes; note it takes about 15 minutes for the pot to come to pressure.
  4. Release pressure: After cooking ends, let pressure release naturally for 10 minutes before carefully venting any remaining steam.
  5. Serve: Stir the mixture well and serve on toasted burger buns with desired toppings.
